Do you actually know what it takes to make red honey? Here is a short processing guide:
Honey processed coffee sits somewhere between washed and natural, but is not entirely one or the other. First, the coffee cherry is removed to varying degrees, leaving behind different amounts of "fruit flesh" (mucilage) on the bean. Then, the coffee is dried in the same way as the natural process, which requires different time or drying methods depending on the amount of fruit flesh on the coffee bean. Once dry, lighter colors like white or yellow will generally be those with the least fruit flesh, which makes the processing simple and clean – closer to a washed process – and usually yields a clear, floral flavor. Conversely, darker colors like red or black typically have more fruit flesh, and the beans are then dried either slowly in the shade or faster in the sun, which results in different colors from the dried fruit flesh – such as black or red.
I think I have given you enough information to understand what a red honey-processed coffee actually is. Now I believe it's time to brew a cup of coffee.
